Post Colon Cancer Surgery Check ups

Hi. My dad just had surgery after discovering he had colon cancer. He did this overseas as it was easier for him to communicate in his mother tongue. He is recovering well and the cancer did not spread to the lymph nodes. But when he returns the doctor has advised him to do checkups here. What specialist would he need to go to, or would he just go to a GP and do blood tests? Could you also advise what things he would need to avoid in terms of diet? Thanks!
